Black Bean & Salsa Salad Recipe
Ingredients:
15 ozs of corn (1/2 can); drained
15 ozs of black beans (1/2 can); drained
1/4 c of chopped scallions; chopped
3/4 c of chopped celery
1/8 c of chopped cilantro
1/8 c of wine vinegar (red)
6 ozs of salsa
Instructions:
Combine the corn, black beans, celery, scallion, and cilantro inside a bowl. Mix the vinegar with the salsa; pour onto the salad. Toss thoroughly; cover tightly then chill. Serve with lettuce.
