Kidney Bean Salad Recipe
Ingredients:
1 can of beans (kidney, 16 ozs); rinsed
1 tsp of pickle (dill); grated
1 stalk of celery; diced
2 tsp of onion; grated
1/4 c of yogurt (anchovy)
1 pc white of egg (hard-cooked); chopped finely
A few lettuce leaf pieces (Romaine)
Instructions:
Mix lightly together 1 can of kidney beans, 1 stalk of celery, 1 tsp of dill pickle, 2 tsp of onion and egg white. Place beautifully on leaves then add 1 tablespoon of yogurt on top.
